This past week, I attended a week-long health seminar and came away with new resolve, new goals and new recipes. Though I enjoyed all of the recipes I tried, one stood out above the rest: the healthy peach crisp with oats.
It was not only a healthier alternative to the high-fat, high-sugar recipes out there, it was also delicious. So delicious, in fact, my picky 9-year-old daughter polished off a good helping and wanted to lick the plate.

Healthy Peach Crisp with Oats

2 (29-oz) cans sliced peaches (or 16oz frozen peaches)
2 tbsp lemon juice, fresh
1/2 cup Florida Crystal (or 1/4 c fructose)
1 tbsp vanilla flavoring
1/3 cup cornstarch
5 tbsp soy margarine, melted
3/4 cup unbleached flour (with germ)
1 1/2 cup rolled oats
- Preheat oven to 400 degrees. Drain the peach juice into a medium saucepan. Spray an oblong 2-quart baking dish with cooking spray and place peaches in dish. Set aside.
- Add 1/4 cup of sugar, lemon juice, vanilla and cornstarch to the drained peach juice. Over medium heat, stir mixture well with a small whisk or fork. Continue stirring until the cornstarch is dissolved. The mixture will become very thick as it cooks. Remove the mixture from the heat and pour over the peaches in the baking dish.
- In a bowl, combine oats, flour, and remaining 1/4 cup of sugar. Stir in melted margarine and toss mixture together with a fork until crumbly.
- Scatter oat mixture evenly over peaches. Bake for 30 minutes or until topping is brown and mixture is bubbly.
This dessert is delicious alone, or serve with soy vanilla ice cream for a special treat.
